Mother’s Day is coming, and I was asked to share a few thoughts about my mother. I have been blessed with one of the most amazing moms in the world. I would describe her as beautiful, fun, loving, loyal, giving, Christ-like and full of laughter.
Growing up, my mother was totally devoted to our family. She is one of the most selfless individuals I know. I remember her working a full time job, washing all the clothes, cleaning, cooking all the meals and keeping all of us kids and the home in order. We all had our chores, but she was the one who taught me how to vacuum, polish furniture, mop floors, wash dishes, make up my bed, change my sheets and many other household responsibilities that would help me one day when I got married. She never complained about her many duties, and she and my dad faithfully took us to church every Sunday and Wednesday night. She sang in the choir and taught Sunday school for 39 years.
As I matured into a young woman, my mom was my confidant. I would come home from dates or school events and talk to her about everything. We would laugh together, and there were times that we cried together. She has been a rock in my life as she has prayed for me and all of our family over the years. She frequently tells me that even when your kids are grown, you never stop being a mother. I am so thankful for my mother, and I give her honor today as we celebrate mothers around the world.
As a member of Daystar’s Partner Services, she spearheaded the process of following up with partners, and she became the familiar voice that provided countless partners with answers to questions, adjustments to pledges and so much more. Serving for an impressive 12 years, she, alongside my dad, worked tirelessly to take Daystar to a new level. Today they are both retired, but their impact can still be felt throughout Daystar. She was a woman of character and joy that brightened the atmosphere wherever she was. What a great job she has done, and I’m excited for this next season as she enjoys traveling with my dad, having new adventures and making more memories.
One of the fun things I did with my mom growing up was helping her when she would make a pound cake. I would mix the cake while she gave me the ingredients. It’s still one of my favorites, so I thought I would share her recipe with you. Hope you enjoy! Happy Mother’s Day!
Vanilla Pound Cake:
Ingredients:
- 3 cups of plain flour
- 3 cups of sugar
- 1 -12 oz. can evaporated milk
- 5 eggs
- 2 ½ sticks butter
- ½ tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. of salt
- 1 tsp. of vanilla
Instructions:
- Sift flour, baking soda, baking powder and salt together.
- Cream the butter in separate bowl.
- Add butter to flour mixture, while beating:
- Add evaporated milk (slowly) to the mixture (still beating)
- Add eggs 1 at a time to mixture
- Continue to beat and add 1 teaspoon vanilla flavoring
- Continue to beat all ingredients for several minutes.
- Pour in a tube pan that has been sprayed with Pam, etc.
- Bake on 325 degrees for 1 ½ hours – ovens vary – it may be longer in some ovens.
- Do not open the oven for the first hour or your cake may fall.
- It is done when a knife is inserted in the center and comes out clean.
