Ingredients:
1 tbsp. olive oil
½ onion, chopped
1 clove garlic, minced
½ tsp. basil
¼ tsp. oregano
½ tsp. thyme
2 cups zucchini, sliced or chopped
2 tbsp. carrots, grated
2 hamburger buns, split
1 fresh tomato
thinly sliced Parmesan cheese
Directions:
1) Sauté the onion and garlic in oil, add herbs
and sauté until the onion is tender, add the zucchini and carrot and
sauté
2) Cover a hamburger bun half with the zucchini mixture, place a
tomato slice on top and sprinkle with Parmesan
3) Broil until Parmesan is melted
