Stir-Fry Green Beans
1-2 lbs fresh green beans 1½ tsp olive oil ¼ cup onion, chopped 1 clove garlic, minced (may add more to taste) salt and pepper (to taste)
Directions: 1) Snap beans and trim ends. Wash thoroughly and drain. Pat dry with paper towels. 2) In large skillet, heat oil. Add onion and garlic; stir. 3) Add beans and stir for 5-10 minutes on medium-high heat. 4) Be careful not to overheat as they are intended to be crisp rather than limp. 5) If you cover them, they will become more limp from the steam. Serves 6-8.
*Variation: add fresh ginger, mushrooms and/or toasted almonds for an Asian flavor.
