Santa Fe Chicken
6 boneless, skinless chicken breast halves 1 bottle of Newman’s Own Italian salad dressing for marinade or your favorite healthy marinade 2 cups roma tomatoes, seeded and chopped 6 low fat mozzarella cheese slices *Optional: 1 can sliced black olives
Directions: 1) Marinate chicken in ¼ of the salad dressing (enough to coat). 2) Refrigerate for several hours or overnight. 3) Grill chicken evenly and thoroughly, just before removing from heat, top with cheese slice. 4) Once cheese has melted, remove to platter and top with chopped tomato and green onion. Add black olives if desired. 5) Serve immediately. Serves 6.
