1 cup saltine crackers, crushed (organic from health food store preferred)
1 cup corn flakes (organic from health food store preferred)
1 cup mozzarella-flavored soy cheese, shredded
¾ cup walnuts, chopped
½ cup onion, chopped
8 egg whites, or 4 large eggs
2 tbsp grated soy parmesan cheese (from health food store)
1 tsp beef or vegetable bouillon seasoning (health food store brand preferred due to the high amount of sodium and msg in the regular cubes)
1 tsp dried basil
½ tsp dry, granulated garlic
1 jar (28 oz) marinara sauce (health food store or “Classico†brand preferred)
extra-virgin olive oil
Directions:
1. In large bowl, combine crackers, corn flakes, mozzarella cheese, walnuts, onion, egg whites or eggs, parmesan cheese, bouillon, basil & garlic. Let mixture stand for 10 minutes.
2. Form meatballs from the mixture. Place the meatballs in a large cold skillet. Drizzle sparingly with extra-virgin olive oil. Turn burner to medium heat and brown meatballs on all sides.
3. Once brown, place meatballs into an 8 X 8 baking dish. Cover the meatballs with marinara sauce and bake them at 350 degrees for 15 minutes.
