Homemade Chicken and Dressing
Ingredients:
Boil chicken (with stick of butter) in large pot of water for
chicken stock
Pan of cornbread (made from scratch – use recipe on cornmeal if
needed)
8 to 10 biscuits (made from scratch - recipe)
6 stalks celery (chopped)
1 onion (chopped)
3 raw eggs beaten
6 hard boiled eggs (chopped)
small bowl cooked grits (optional)
salt and pepper to taste
4 tablespoons of sage or to taste
Instructions:
1. Cook cornbread and biscuits (can be cooked ahead)
2. Put chopped celery and onion in small amount of water
3. simmer onions and celery on low until soft
4. crumble breads in large bowl
5. add celery and onion to crumble dry mixture
6. add: 3 raw eggs and 6 hard boiled eggs
7. add: small bowl grits
8. add salt, pepper, and sage
9. Pour heated chicken stock in mixture; mix until consistency is
very moist and will pour in a baking pan
10. Bake on 350 about 30 to 40 minutes or until top is golden brown
*Most of these ingredients can be cooked ahead and mixed together
later.
