Caribbean Saffron Rice with Chicken
Ingredients:
2 cups chicken stock
1 cup uncooked brown rice
½ cup diced carrots
½ cup green peas
¾ cup chopped onion
¾ cup chopped bell pepper
1 tbsp. chopped garlic
1 tbsp. olive oil
½ tsp. saffron
1 chicken breast (divided into pieces)
Directions:
1) In skillet, combine oil, onion, garlic, bell pepper and chicken
and cook until browned
2) Add rice, chicken stock, carrots, peas and saffron; bring mixture
to a boil on medium-high heat
3) Cook until liquid has been almost absorbed; reduce heat to low
and cover until rice is tender
